In 30th place, the Swiss Mushroom Smashburger INGREDIENTS - 220g ground beef (for two 110g smash patties) - 2 slices Swiss cheese - 2 large onions, thinly sliced - 200g mushrooms, sliced (plus extra for mushroom confit) - 4 tbsp butter - 1 head garlic - Fresh thyme sprigs - 1/2 cup mayonnaise - 4 mushroom heads - Black pepper to taste - Fresh lemon juice - 2 burger buns - Handful of rocket - Salt to taste INSTRUCTIONS 1. Caramelize onions in butter over medium-low heat for 20 mins, then add sliced mushrooms and thyme. Cook until mushrooms are golden. 2. Mix mayonnaise with garlic confit, black pepper, and a squeeze of lemon juice for the aioli. Set aside. 3. Form beef into two 110g balls. Heat cast iron pan until smoking hot. Place beef balls on skillet and smash thin with spatula. Cook 2 mins, flip, add Swiss cheese on each, and cook 1 min more. 4. Toast buns, then layer: bottom bun, sauce, rocket, first smash patty with cheese, second smash patty with cheese, mushroom-onion mix, aioli, top bun. #burger #smashburger #burgertok
