Today is a day. Gluten free fluffy pancakes! 1 cup GF all purpose flour. 2 tbs caster sugar 1 scoop of vanilla protein powder 1 1/2 tsp baking powder 1/2 tsp salt 3/4 cup of milk 1 large eggy 2 tbs of coconut oil melted 1 tsp vanilla extract Mix well together so the lumpy bits are gone. Let the batter rest for 5 minutes. Oil a pan with coconut oil and use a spoon to evenly dollop the pancakes onto a nonstick preferably stainless steel pan on a medium heat. Wait until outer edges are no longer gooey then flip with a spatula. They are THICK so a lower temperature is preferable for longer on each side for it to cook all the way through if you notice them burning a little. Once cooked, toast some shredded coconut in the same pan before removing from heat. Get you beat most favourite ice-cream, (mine is strawberry) or cream topping, Nutella works pretty good too. Place topping on your least burnt pancakes and sprinkle on the coconuts. Serve at your lowest point, will make the day much better. Love from Ham and B x
