3 ingredient Lemon Posset 🔥🔥🔥 Ok so I saw this and had to try! I actually did test it with light cream and surprisingly it worked just took longer to set but would recommend regular thick cream. Natural granulated sweetener works too! And if you put them in the freezer for an hour or 2 , wowza! Ingredients: 3 medium Lemons 1 cup heavy cream (240ml) 50g of sugar Cut each Lemon in half, remove the flesh and squeeze out the juice into a jar. Zest from the bottom of the Lemon directly into a saucepan, then add your cream and sugar. Bring the mixture to a gentle boil then reduce heat to a simmer, whisk constantly for a few minutes or until mixture has thickened slightly. Pour the mixture through a strainer, then add 3 tbs of the reserved lemon juice from the jar also through the strainer. Remove strainer and whisk to combine. Pour into the Lemon skins (or any small dish). Refrigerate for at least 3 hours or overnight for a firmer texture. enjoy! #lemonposset #lemons #lemon

My egg smash recipe always hits with you guys 🔥 so thought we could try using lettuce instead of toast 👌 Ingredients: •1/2 avocado •2 tbs light cream cheese or cottage cheese, 40g •2 boiled eggs, a little yolk is always yum •tiny squeeze of lemon juice •salt & pepper to taste Garnish: Honey, chilli flakes Method: Lightly mash avocado in a bowl, add in cream cheese, eggs, a squeeze of lemon juice and season with salt and pepper. Add smash to your cos lettuce cups, garnish and enjoy 🥰 Notes: Feta would be a good cream cheese replacement if needed.
BALANCED BIG MAC BOWL Day 1/10 balanced bowl series- Big Mac Burger Bowls Because my loaded sweet potato taco bowl was such a hit I thought it would be fun to do a series. This one was inspire by @on.trac5 and taste just like a cheeseburger but so much more filling 😍 Ingredients: •1 tbsp olive oil •1/2 brown onion, diced •500g minced beef •8 cup iceberg lettuce, shredded •pickles •4 cheese, slices •8 x potatoes, (I used spud lite) •salt & pepper to taste paprika •1/2 tsp garlic & onion powder Big Mac Sauce: •80g mayonnaise •30g salt reduced tomato sauce •1tsp mustard •tbs pickle juice •1/4 tsp paprika Optional toppings: •Tomato, diced Instructions: 1. Slice the potato into chips. Season and drizzle 1/2 tbs olive oil. Cook in the air fryer for approx 15 minutes at 200•C or until cooked. 2. Heat pan over medium-high heat and add remaining olive oil. Add in onion and cook for 2-3 minutes until softened. Add in mince meat, season with salt, pepper, garlic and onion powder. Break apart, and cook until browned. 3. Assemble your bowl with, lettuce, chips, mince & onion, cheese (melt it) and tomato’s. 4. In a small bowl, whisk together all sauce ingredients. Then drizzle over the bowl and enjoy! VIETNAMESE SATAY NOODLE SALAD Day 3/10 balanced bowl series This was DELICIOUS, the perfect summer dish 😍 Satay Sauce: •80ml of light canned coconut milk •20ml of soy sauce or vegeterian stir fry sauce •40ml sweet chilli sauce •30g peanut butter •1tsp curry powder •1/4 tsp each garlic powder & chilli flakes Noodle Salad: •150-200g vermicelli rice noodles •1-2 carrots shredded •1 cucumber, thinly sliced •1/4 head of ice berg lettuce, finely chopped •crushed nuts, spring onion, chilli optional garnish Satay Chicken: •400g of chicken tenderloins, sliced •1tsp curry powder •salt & pepper •1/2 tbs olive oil. Method: Mix dressing ingredients in a bowl until smooth. Prepare noodles according to packet instructions. Place the Satay Chicken ingredients except the oil in a bowl and toss to coat. Heat oil in a non stick fry pan over medium-high heat. Add the chicken and cook for 3 -5minutes until golden and cooked through , then transfer to a plate. Assemble in a bowl your noodles, salads, chicken and Dressing, then serve with garnishes of choice. Serve warm. So easy and makes about 3 bowls in the deluxe machine 😍 Ingredients: •1 container of Mangos in juice * •1/3 cup protein vanilla yoghurt 80g •1 /2 -1 scoop of vanilla protein powder (I use @macr0mike vanilla buttercream DC:amb-noa) Method: Place all ingredients into your Ninja creami Pint. Mix around with a fork, put the lid on securely and give it a little shake. Freeze for 20 hours +, we prep ours the night before. When ready, place your pint into the creami, turn the power on, select full, sorbet mode and let the magic happen 😂👌 I have the deluxe so the Pint’s are X-Large! This comfortable serves 2 at 263 calories each. GREEK TURKEY MEATBALLS. balanced bowl 🥰 Recipe serves 4 + Turkey meatballs: •500g lean Turkey or chicken mince •1 egg •50g feta •1/3 cup breadcrumbs (35g) •1/4 cup finely diced or grated onion 1/2 tsp garlic powder & oregano •3 tbs fresh parsley, chopped •Salt & pepper 2 tbs olive oil for frying or you can bake them. Creamy Yoghurt sauce; •200g Greek yoghurt •1tbs mayo or olive oil •2tsp lemon juice •1tsp zest •1 garlic clove, grated •salt & pepper Other: •200g basmati rice uncooked weight (if you need a recipe to make turmeric rice let me know) •tomatoes, halved •Cucumber, diced •purple onion, diced Method: In a large bowl, add the ground turkey, egg, breadcrumbs, onion, garlic, parsley, salt and pepper; use clean hands to form into 14-16 meatballs. Set aside. Prepare tumeric rice and Greek yoghurt sauce. Heat a pan with olive oil over medium heat. Once hot, add meatballs and cook for 7-8 minutes, turning constantly to ensure even cooking on all sides. Once cooked through, remove the meatballs and set aside.
