Ingredients: • 3-4 chicken breasts • 1 block of Halloumi • 1 tbsp Cajun seasoning • 2 tbsp Sriracha 2 tbsp honey For the dipping sauce use perinaise or: Sriracha & Mayo Method 1. Score your chicken, and season with Cajun 2. Stuff the chicken with slices of halloumi 3. Mix 2 tbsp of sriracha and 2 tbsp of honey and brush on top of the chicken breasts 4. Airfryer Dominos Cookies 🍪 Makes 6 cookies If you like the Dominos cookies and creme or caramel eggs, you need to try these. I’ve made them using Cadbury caramel eggs too. You can also make your own cookie dough but I skipped that. Ingredients: - 350g Chocolate Chunk Cookie Dough (I used two packets for 6 eggs) - x6 Creme or Caramel Eggs Method: 1. Take your pre-made cookie dough and divide it into six equal portions. If making six cookies, you'll need two pieces per cookie. 2. Flatten each portion into a round circle. Place a Creme Egg on top of one of the flattened dough pieces, then cover it with another piece of dough. 3. Seal the edges, ensuring there are no gaps to prevent the Creme Egg from leaking during baking. 4. Place the cookies in a lined air fryer basket and bake at 180°C for 10 minutes. 5. Allow the cookies to set for 10–15 minutes before enjoying. Ingredients - 1Kg diced beef - 200g bacon 🥓 - 1 tbsp butter (to seal the beef in) - 450g button mushrooms left whole - 3 carrots chopped - 2 shallots - 1 tbsp tomato purée - 2 bay leaves - 4 crushed garlic cloves - Fresh Rosemary or thyme - Salt and pepper - 250ml red wine - Beef stock, with very little liquid - 1 tbsp cornflour - Fresh parsley to garnish - Serve with 150g mash Method 1. If you have time, brown the beef and cook the bacon 2. Add all ingredients to the slowcooker and cook on low for 7-8 hours (the mushrooms will reduce greatly in size don’t worry) 3. Ingredients: - 4 chicken breasts, cut into long strips - 1 tbsp garlic powder - 1 tbsp Cajun or paprika - Salt and pepper Coat chicken in: - 1 egg - 150g cornflakes, crushed For the sauce: - 150g mayonnaise - 90g ketchup - 1.5 Tbsp Worcestershire sauce - 3 cloves fresh grated garlic or 1-2 teaspoons garlic powder - 1 tsp fresh ground black pepper - Salt - 1/2 tsp Cajun For the texas toast: 1 loaf brioche bread 1/2 cup unsalted butter 1 teaspoon salt Method: 1. Coat the chicken in the spices, then beaten egg and then your crushed cornflakes. 2. Repeat the process for all chicken strips then coat in some low-calorie cooking spray and air fry for 12-14 minutes at 190. I decided to add some frozen crinkle cut fries to the air fryer too. 3. While that's cooking, prepare your raising canes sauce by mixing the ingredients above together. 4. You can also make your own Texas toast by cutting some brioche loaf into slices and frying in some butter and salt. Airfryer Croque Monsieur 🇫🇷 (Ham & Cheese Toastie) 529 Calories Now this is a quick and easy lunch that I’ll never get tired of. So easy and so tasty! Ingredients: - 2 slices white bread (I used a tiger loaf) - 1 slice of good quality ham - 30g mozzarella, grated - 30g reduced fat cheese, grated - 2-3 tbsp bechamel sauce (Use it on a day you’re making lasagne) - 1 tsp Dijon mustard Method: 1. Add 1 tbsp bechamel sauce to your bread, top with some grated mozzarella and cheddar. Add your ham, then spread some Dijon mustard to your second slice of bread. Close then top the toastie with another tablespoon of bechamel sauce and more cheese. 2. Airfry for 8 minutes at 180 keeping a close eye on it so it doesn't burn PS the cheese shouldn't fly away in the airfryer as the cheese sticks to the bechamel sauce. Airfryer Protein Bagels 🥯 Easy high protein bagels full of the good stuff. Made with a simple dough of flour and yogurt. Recipe makes 4 bagels Ingredients: - 200g self-raising flour - 275g 0% fat Greek yogurt - 1 egg wash - Everything bagel seasoning (if you don’t have this feel free to use sesame seeds or poppy seeds) For the filling: - 1 avocado - 4 boiled eggs - 2 tbsp cottage cheese - Handful Spring onion - Handful Basil - 1/2 tsp Chilli flakes - 1/2 Lemon, juiced - Salt and pepper - Pinch of dill (optional) Method: 1. To a bowl, add your flour and Greek yoghurt and give it a good mix with a fork (or feel free to use your hands) 2. Roll the dough and shape into a ball then cut into four even pieces. Roll and make a long sausage shape then make a circle, making sure to pinch the edges so they form together. 3. Cover the bagels in egg wash and sprinkle over some seeds. I used everything bagel seasoning but poppy seeds or sesame seeds would work well here. 4. Airfry for 18 minutes at 180 5. While that is cooking, prepare your filling by mixing together the ingredients above (minus the dill). 6. Airfryer Burrito Bowl 🌮 AD If you love burritos, you need to try this deconstructed burrito bowl with cubed potatoes instead of rice. I used the Air Fryer Spray from Frylight to crisp up the cubed potatoes and to coat the chicken. Ingredients For the potatoes: 500g potatoes Air Fryer Spray from @FrylightHQ 1 tbsp Cajun seasoning Salt and pepper For the chicken: 500g boneless chicken thigh Air Fryer Spray from @FrylightHQ 2 tbsp Cajun seasoning Juice of a lime For the salsa: 250g cherry tomatoes, diced 1 red onion, diced 1 jalapeño, diced Coriander, finely chopped Juice of 1/2 lime Salt For the guacamole: 1 avocado, mashed Coriander, finely chopped Garlic powder Salt and pepper Method: 1. Pop your chicken thighs in a food bag with Cajun seasoning and some Air Fryer Spray from @FrylightHQ. Leave to marinate for one hour in the fridge. 2. Cut your potatoes into small bitesize chunks and add to a bowl with some Air Fryer Spray from @FrylightHQ, Cajun seasoning, salt and pepper. Give that a good mix. 3. Airfry your potatoes for 22 minutes at 200. If you have two drawers, open one drawer when the time has 14 minutes left and pop your chicken thighs in it. That way, the airfryer is nice at hot giving the chicken a nice char. 4. While the potatoes and chicken are cooking, prepare a quick salsa by chopping your red onion and cherry tomatoes. Add a handful of coriander, juice of 1 lime, salt and pepper. You can also make a quick guacamole by mashing one avocado with some coriander, garlic powder, salt and pepper. 5. When the chicken and potatoes are finished cooking, assemble the bowl by adding some potatoes and chicken to a bowl. Slowcooker Mini Egg Chocolate Fondant 🍫 (Serves 6) Your new Mini Egg Easter obsession. Recipe is from my book Six Ingredient Slowcooker but with a twist… using MINI EGGS 🥚🍫 Ingredients: - 100g butter, melted - 150g soft light brown sugar - 4 eggs, beaten - 250g self-raising flour - 20g cocoa powder - x2 bags of mini eggs (160g) For the chocolate sauce: - 275ml boiling water - 60g chocolate - 150g brown sugar To serve: Vanilla Ice Cream More mini eggs (if you like) Method: 1. Grease your slowcooker with some butter then melt 100 grams of butter n the microwave for 1 minute and set aside. 2. Sift your flour and cocoa powder into a large bowl, and add 150g of your brown sugar, 4 eggs and 100g melted butter. Mix using whisk until well combined. 3. Add 3-4 tbsp of water to help loosen the consistency. 4. Transfer the mixture to the slow cooker and add 1 bag of mini eggs inside the mixture. 5. Melt 60g of chocolate (feel free to use up any leftover Easter eggs for this) and mix with 150g of brown sugar and 280ml of boiling water in a jug. 6. Pour the chocolate liquid all over the cake, cover the slowcooker with a clean tea towel and place on the lid, and cook on high for 2 hours or low for 4 hours. 7. Airfryer Meal Prep, Loaf Tin Chicken (Serves 5 - 6) The ultimate meal prep costing £2.78 per portion including rice and sauce. This could also be used as a sandwich filler or for wraps. These rice bowls are a fav of mine. Ingredients: - 1kg chicken thighs - 1 lemon, squeezed - 2 tbsp Greek yoghurt - 2 tbsp Harissa paste - Salt and pepper - 2 tsp oregano - 2 tsp garlic powder - 2 tsp Cajun Serve with: - 2-3 Cherry Tomatoes, chopped - Sprinkle of fresh coriander - 1/6 cucumber - 150g basmati or jasmine rice For the sauce: - 3 tbsp Greek Yoghurt - 2 tbsp Sriracha - Juice of one lime Method: 1. Add your chicken thighs to a bowl with the seasonings/spices above. Mix well. 2. Grab a loaf tin and layer it with the marinated chicken thighs. Pop in the air fryer for 35 minutes at 190. Halfway through be sure to cover in tinfoil to stop the top from burning. 3. Once cooked, drain the excess juices before chopping the chicken into small pieces. 4. Serve with some rice, cherry tomatoes, fresh coriander and some cucumber.
