Biscoff Cinnamon Buns Serves 8-10 Ingredients: Cinnamon buns: 32g (1 tbsp) honey 1 packet dry yeast 340ml (1 1/4 cup) milk 525g (3 cups) plain flour 55g (3 tbsp) brown sugar 60g (1/4 cup) butter Pinch sea salt Filling: 58g (1/4 cup) brown sugar Pinch sea salt 1/2 tbsp cinnamon 80g (1/3 cup) butter Biscoff cream cheese icing: 65g (1/4 cup + 1 tbsp) butter 113g (scant 1/2 cup) cream cheese 1 tsp vanilla bean extract 130g (1 cup) icing sugar 2 tbsp biscoff spread Topping: Biscoff spread Biscoff cookie crumble Method: 1. In a bowl add the honey and milk and microwave for about 30 seconds - 1 minute or until warm (not too hot or cold) 2. Add in the yeast, stir and set aside 3. In your mixing bowl add the flour, sugar and salt 4. Pour in the butter and yeast mixture once risen and activated (takes 5-10 min depending) 5. Using your mixer with a kneading head, knead for 5 - 10 minutes until a dough ball forms and stops sticking to the sides of the bowl 6. Grease a large bowl and place in the dough, turn over in the bowl so it’s greased and cover with a damp towel and rise for 1-2 hours (until risen or almost doubled in size) 7. Once the dough has risen punch down dough and place on a counter top and roll out into a rectangle 8. Smear butter over the dough with a spatula, then sprinkle with cinnamon and brown sugar 9. Roll up the dough into a cigar and cut with a sharp knife into 8 - 10 slices 10. Line a baking dish and add the cinnamon buns, cover and allow to rise for about 20-30 min until risen 11. Preheat oven to 180°C/356°F while rising, when risen place in cinnamon buns into the oven 12. While baking mix together cream cheese frosting - blend biscoff spread first, add butter then remaining ingredients. 13. Bake for about 15-25 minutes or until golden then remove from oven 14.
