Brown Butter Chocolate Chip Cookie Recipe Makes 12 cookies 320g butter 275g brown sugar 120g caster sugar 3 eggs 360g self raising flour 250g plain flour 25g corn flour 10g bi carb soda 300g small choc chips 300g large choc chips (melts) Begin by browning 160g of the butter in a saucepan over medium heat until it smells nutty and turns golden brown. Transfer to a bowl and allow it to cool to room temperature. In the bowl of a stand mixer, add the remaining 160g of cold butter and pour the cooled brown butter over it. Mix until smooth and creamy. Add the brown sugar and caster sugar and mix again until well combined. Add the eggs, self-raising flour, plain flour, corn flour, and bi carb soda, and mix until just combined—do not overmix. Fold in both the small and large chocolate chips by hand. Divide the dough into 150g portions and place on a lined tray. Bake at 200°C for 12–15 minutes, or until golden brown around the edges but still slightly soft in the centre. Let cool slightly before enjoying.

Bachamel pasta bake (@walla_abueid) 🛒 Ingredients: Meat Mixture: * 1 kg minced meat * 1 yellow onion (diced) * 1 jar Bolognese sauce * 1 tbsp tomato paste * 1 tbsp Vegeta (or any all-purpose seasoning) * 1 tsp Italian herbs * 1 tbsp paprika * Vegetable oil (for sautéing) Béchamel Sauce: * 3 tbsp butter * 5 tbsp plain flour * 5 cups milk * 1 tbsp Vegeta * 2 tsp garlic powder * 1 tsp white pepper * Handful of cheese (mozzarella, cheddar, Parmesan mix) Pasta: * 1 bag of pasta (penne, rigatoni, or your choice) * 1 tbsp tomato paste (to mix with pasta) * Salt & oil (for boiling pasta) Topping: * Shredded cheese (mozzarella, cheddar, Parmesan mix) 🍴 Method: 1. Meat Mixture: * Sauté diced onion in oil until soft. * Add minced meat, cook until browned. * Stir in Bolognese sauce, tomato paste, Vegeta, Italian herbs, and paprika. Simmer on low for 10 mins. 2. Béchamel Sauce: * Melt butter in a pot, whisk in flour until golden. * Gradually add milk, whisking continuously to avoid lumps. * Season with Vegeta, garlic powder, and white pepper. * Stir in a handful of cheese until smooth and creamy. 3. Pasta: * Cook pasta in salted, boiling water with a drizzle of oil until al dente. Drain. * Mix pasta with half the béchamel sauce + 1 tbsp tomato paste until fully coated. 4.
